An appts. for drying fish meal includes an agitating chamber (20) and a drying tower (22) in which the length of the travel path of the material carried in a stream of heated air can be varied to change residence time. The stream passes upward in the tower and then downward to an outlet, and the path is defined by a series of vertical baffles (40-46). The baffles are aligned in a common plane between inlet and outlet so that the path passes upward on one side of the plane and downward on the other. The baffles are individually movable out of the plane by a drive which can move the top baffle to an inoperative position so that stream height is changed.
