PURPOSE:To obtain dried adzuki bean having high preservability, preventing the degradation and deterioration of nutrient components, by combining selection, washing, immersion, filling in tray, preliminary freezing, vacuum freeze-drying and vacuum packaging steps in a manner so as to exert a specific action. CONSTITUTION:Same kind of adzuki beans having uniform quality are choiced, cleaned in water to remove dust, etc., and immersed in water at 10-30 deg.C for 10-24hr to impregnate water into the adzuki bean and obtain swollen adzuki bean. The swollen adzuki beans are drained, divided into prescribed portions, charged into trays, and frozen in a freezing chamber by keeping at -18--25 deg.C for 18-25hr. The preliminarily frozen adzuki bean is vacuum freeze-dried in a vacuum freeze-drying chamber to obtain a dried porous adzuki bean, which is packed in vacuum. Since the dried adzuki bean prepared by the drying process has extremely porous texture, it can be easily reconstituted with water and boiled in a short time. |
