PURPOSE:To readily obtain histidase, having high activity and useful as cosmetics in high yield, by cultivating Pseudomonas acidovorans in a culture medium containing polypeptone and L-histidine, etc., as a main carbon source. CONSTITUTION:0.1-5wt.% L-histidine which is a carbon source is blended with 0.05-2wt.% polypeptone which is a nitrogen source and, as necessary, salts, such as KH2PO4, to provide a cultivation culture medium. Pseudomonas acidovorans (ATCC-11299b) is then inoculated into the culture medium and cultivated at 25-40 deg.C for 12-36hr. The resultant microbial cells are subsequently dispersed in an aqueous medium, such as water or buffer solution, and heated at 60-85 deg.C. The aimed histidase is then extracted to the outside of the microbial cells, separated and recovered.
