A device for filleting fish comprises a cutting blade 112 mounted between a pair of parallel legs 114,116, the legs being rigidly connected to a base portion 117 opposed to the blade 112. To fillet a fish, a cutting edge 140 of the blade 112 is inserted behind a gill of the fish, and the tool is then drawn rearwardly towards the tail to sever the fillet which passes between the blade 112 and the base portion 117. The length and curvature of the blade 112 can be adjusted to conform to the thickness and roundness of the fish. <IMAGE>
