摘要 The present invention relates to a method and installation for determining the saturation temperature of a natural salt in wine. According to the method, the wine is cooled to a temperature lower than the saturation temperature, and greater than that at which the spontaneous crystallisation of the salt in question starts, an excess of this salt is added thereto, the temperature T of the wine, which is agitated and held in agitation, is gradually raised to a temperature greater than the saturation temperature, and during this rise, several measurements of the conductivity C of the wine are made as a function of the temperature T, the C T function is considered, the temperature near which this function changes its behaviour because of the dissolving of the salt approximately indicates the saturation temperature, the variation of the C T function with temperature T is, before TS, of more or less linear shape, and after TS, of exponential shape, whose form is C = (exp AT) + B, where A and B are constants. The method is characterised in that it consists in: calculating, for several conductivities C measured, or deduced from measurements, before and after TS, values of C1 according to the relationship C1 = C/ (exp A1T), where T is the corresponding temperature, and A1 is a constant which differs from A, considering the new function C1 T, deducing the temperature TS at which the function C1 T has a marked change in behaviour as regards the change in temperature. s
