The invention relates to an automatic machine intended for cutting out lettuces which are held, during cutting, in a closed position gripped in such a manner that, after cutting-out, they resume their natural rounded appearance. This machine is characterised in that each lettuce is: - in a first stage, introduced into a support consisting of concentric holding rings 2, 3 and 4 of decreasing diameters; - in a second stage, cut out by a cutting device 5 operating between the holding rings; - in a third stage, discharged by the automatic opening of the lower parts 6, 7 and 8 of the holding rings. The machine according to the invention can cut out any type of lettuce. <IMAGE>
