The preparation process comprises the reaction of a glucide having at least one ketose pattern, such as saccharose, with hydrogen fluoride used as solvent and reactant, and thereafter the elimination of the hydrogen fluoride. The weight ratio between the glucide and hydrogen fluoride quantities is at least equal to two. The polymerisation degree of the products obtained is increased by using a mixture of said glucide with an aldose or polyaldocide. Application particularly to the preparation of food products susceptible of having a low caloric value, as well as products for cosmetology.
