PURPOSE:To gelatinize vitellus (vitellus-containing material) in a raw state as it is without reducing vitamins and to raise digestibility, by pressurizing vitellus (vitellus-containing material) and gelatinizing. CONSTITUTION:Vitellus or a vitellus-containing material mayonnaise, a raw material mixture for custard pudding, etc., is pressurized (preferably 500-11,000atm. hydrostatic pressure for 1min-1hr) and the vitellus is gelatinized. |
