PURPOSE:To obtain the titled sweetener having excellent water-solubility and thermal stability, non-fermentative with microorganisms such as cariogenic bacteria and having refreshing excellent sweetness, by using non-sucrose-type di-Di-fructosylfuranose 2,6':6,2'-dianhydride as a component. CONSTITUTION:Levan which is a polysaccharide is containing D-fructose as recurring unit is treated with levan fructo-transferase to obtain the titled sweetener having a sweetness of about 50% of that of sucrose and composed of di-D-fructosylfuranose 2,6':6,2'-dianhydride of formula which is a non-sucrose disaccharide. |
