PURPOSE:To obtain the titled roast sweet potato which is not tough even at low temperature and capable of readily eating, by cooling relatively slowly baked sweet potato to room temperature - freezing point and further rapidly freezing the potato. CONSTITUTION:A sweet potato having preferable size as a roast sweet potato, e.g. 95-150mm length, 50-65mm diameter and 140-230g weight is relatively slowly baked for 65-125min on an electric oven to afford a roast sweet potato having >=35% sugar concentration, which is then cooled to ordinary temperature - 0 deg.C and rapidly frozen under atmosphere of <=-20 deg.C to provide the titled roast sweet potato which is not tough even at -10--15 deg.C, has excellent sweetness and can readily be eaten. |
