Process for the production of sausages, such as raw sausages, cooked-meat sausages or scalded sausages, in which, after production of a sausage mixture, the sausage mixture is filled into sausage casings and the fresh sausages are further processed in a known manner, where, prior to filling, the sausage mixture is mechanically mixed with a gas which is inert to the sausage mixture, forming a stable sausage mixture foam. The litre weight of the sausage mixtures which are produced by this process is reduced by 1-30 % relative to the sausage mixtures of conventional sausages. The proportion of inert gas in the sausage mixture is dependent on the type of sausage and the particular recipe. |
