PURPOSE:To enable a stable roasted state to be attained by a method wherein a roasting level is set in advance to start heating operation, temperature within a roasting chamber is automatically detected and controlled and a heating area is counted in reference to the temperature and time and heating operation is carried out until a standard heating amount is attained. CONSTITUTION:A roasting level setting part 7 can set a roasting level to L, M and H in advance and a heating amount setting part 8 may set a standard heating amount and store it in reference to a temperature and a time in correspondence with each of roasting levels in the roasting level setting part 7. The heating amount setting part 8 is provided with a fine adjusting part 9 for adjusting a roasted condition in response to heating time. A temperature control part 10 has a temperature of a temperature detecting part 6 and a roasting level at a heating amount setting part 8 inputted therein. A temperature of the temperature detecting part 6 and the roasting level at the heating amount setting, part 9 are inputted to the temperature control part 10, and outputted to a heating amount control part 11 for controlling a heating amount for a gas burner 4; its temperature is controlled and then outputted to an area counting part 12. The area counting part 12 may count the heating area in reference to the temperature and the time. If the unit is heated up to a standard heating amount, it is outputted to a roasting completion stopping part 14, a termination of roasting operation is carried out at a heating amount control part 11 and at the same time an informing part 15 may inform the completion of roasting.
