PURPOSE:To produce homogeneously foamed cheese, by mixing cheese with a chelating agent and, if necessary, cellulose or the like, allowing the mixture to pass through a foaming process and then filling the foamed mixture in a molding frame immediately or through a foaming effect-supporting process. CONSTITUTION:Cheese is mixed with a chelating agent such as sodium citrate, a phosphate salt, phytin, phytic acid or a salt thereof and, if necessary, further with cellulose (e.g., one comprising the crystalline parts of a natural cellulose such as wood, cotton or ramie, produced by perfectly removing its amorphous arts). The mixture is passed through a foaming process and then filled in a molding frame immediately or further through a process mechanically supporting the foaming effect.
