<p>PURPOSE:To produce TAKUAN (a pickled radish) having good palatability, taste and flavor and high storability, by desalting a salted radish, pickling the desalted radish in a seasoning soln. having a specific sugar concentration, sealing the pickled TAKUAN together with the seasoning soln. in a container and then thermally sterilizing the sealed TAKUAN, thus permitting the radish to be seasoned in a short time at ordinary temp. CONSTITUTION:A salted radish is desalted (preferably to a salt concentration of 4-6%) and then pickled in a seasoning soln. having a sugar concentration of >=35%, preferably 40-55% (preferably for 4-6 days). The prepared TAKUAN is sealed together with the seasoning soln. in a container and thermally sterilized (preferably at 65-80 deg.C for 20-40min).</p> |
