The packing unit comprises an air-tight container and freshly peeled potatoes introduced therein, the container being filled with a mixture of from 50 to 70 % by volume of carbon dioxide and from 50 to 30 % by volume of nitrogen. The invention is based on the knowledge that freshly peeled potatoes, which usually keep very badly and spoil quickly, keep much better in this atmosphere of carbon dioxide and nitrogen. Accordingly, the invention also relates to a process for preserving and storing freshly peeled potatoes, in which the potatoes are introduced into a container, the air in this container is replaced by a mixture of from 50 to 70 % by volume of carbon dioxide and from 50 to 30 % by volume of nitrogen, and the container is then sealed. In this way, freshly peeled potatoes can be stored for more than 12 to 14 days without losing freshness. |
