PURPOSE:To easily prepare a silk-strained bean curd resistant to collapse and preservable over a long period, by pouring a coagulant and soya milk into a coagulation box, cutting the coagulated milk in the above state to specific size and heating in a heating pot. CONSTITUTION:Soya milk 12 is poured together with a coagulant into a coagulation box 10 and coagulated to obtain a bean curd 12. A fringe-separation tool 16 is inserted into an end of the coagulation box 10 and transferred to the other end. The bean curd 12 adhering to the coagulation box 10 can be separated therefrom by this process. The separation tool is pulled up from the box, a bean curd cutter 18 is inserted into the coagulation box 10 and the bean curd 12 in the box is cut to prescribed size. The cut bean curd 12 is put into a heating pot 24 in a state held in the coagulation box and heated to obtain the objective bean curd in high efficiency. |
