<p>PURPOSE:To prepare the titled pickles preservable over a long period without losing the original favor of ginger and free from characteristic disagreeable smell resembling the smell of cedar, by adding a cyclodextrin to ginger in the pickling of ginger in an acidic acidulant liquid. CONSTITUTION:The objective pickled ginger can be prepared by adding a cyclodextrin (e.g. beta-cyclodextrin) to ginger in the pickling of ginger in an acidic acidulant liquid (preferably food vinegar, plum vinegar, etc.). The amount of the cyclodextrin is preferably about 0.2-0.5wt.% based on the whole pickling mixture.</p> |
