<p>PURPOSE:To eliminate browning of color or deterioration of flavor in preserving at ordinary or low temperatures for 1-2 months, by vacuum packaging a food material selected root vegetables in a packaging material of high gas barrier properties and heat-treating packaged food material at 100-120 deg.C. CONSTITUTION:A food material selected from potatoes, sweet potatoes, taros, carrots, lotus roots, burdocks, etc., is vacuum, packaged in a packaging material of high gas barrier properties and then heated at 100-120 deg.C to produce the aimed heat-treated food material. The packaging material of high gas barrier properties has <=30ml oxygen permeability (20 deg.C, ml/m<2>.24 hr.atm) measured according to ASTM.D-1434-58 and simple substance films, e.g. polyvinylidene chloride, nylon, polyvinyl alcohol, etc., are cited as the packaging material satisfying such requirements. The resultant food material with not cause browning even in preserving at ordinary or low temperatures for 1-2 months and flavor can be effectively prevented from deteriorating.</p> |
