PURPOSE:To obtain a microorganism sensor for measuring the freshness of fish capable of synthetically, rapidly and simply measuring various chemical changes relating to the freshness of fish, meat by mounting immobilized bacteria to the leading end part of an oxygen electrode. CONSTITUTION:A glass cylinder 15 is inserted in a main body 13 having a specimen introducing port 11 and a discharge port 12 at the lower part thereof through an O-ring 14 and an oxygen electrode 2 is arranged in the glass cylinder 15. Then, a Teflon film 16, an immobilized microorganism membrane 13 and a dialytic membrane 17 are successively allowed to cover the leading end part of the oxygen electrode 2. The specimen such as the water extract obtained from fish meat of which the freshness must be determined is introduced into the main body 13 from the specimen intoruding port 11 to record the response of the oxygen electrode. As the freshness of the fish meat becomes lower, peptide, free amino acid and sugars reduced in M. W. by autodigestion or the action of microorganism increase and the breathing activity of the microorganism of a sensor increases and, therefore, the response of the sensor increases. |
