Enzymes capable of converting glucose to fructose are produced by cultivating a micro-organism of the genus Streptomyces which assimlates xylan, in a medium containing xylan or materials containing xylan, such as straw, wheat bran, corn cob, corn hull, rice bran and pulp waste. Micro-organisms specified are S.albus, S. flavovirens, S. echinatur and S. achromogenus.ALSO:A syrup containing fructose is produced by treating an aqueous solution containing glucose with a glucose isomerizing enzyme which has been derived from a micro-organism of the genus Streptomyces which assimilates xylan by cultivation in a medium containing xylan or materials containing xylan. The glucose solution is preferably treated with enzyme at 45 DEG -80 DEG C. in a pH range between 5.5 and 8.0. |
