PURPOSE:To obtain a molded article having a penetration strength usable as a practical food at a low cost, by holding already heat denatured beef under condition of high temperature and pressure so as to mutually bind the beef by melting of contained proteins for a given time and molding the resultant beef. CONSTITUTION:Already heat denatured beef, e.g. beef residue, etc., after heating and utilizing as a raw material for soup, etc., is filled in a high pressure chamber 11 of a high-pressure vessel 10 having a cylindrical vessel 3 and a pair of pistons 1 and 1, etc. The beef is then pressurized to about <=170kg/cm<2> by driving pistons 1 and 1 with a hydraulic cylinders 4 and 4 under about <=70kg/cm<2> and simultaneously heated at 130-180 deg.C by a heater 5. Thereby the beef is mutually bound and remolded by melting of mutual proteins contained in the beef. According to this method, heat denatured beef which has found only uses as a raw material for animal feeds, etc., can be effectively reutilized as a food material. |
