摘要 PURPOSE:To obtain a cereal food having excellent preservation quality and soft sense of eating, by coating expanded cereal substances with a binding substance and saccharides, integrating and molding the resultant coated substance. CONSTITUTION:(B) A solution prepared by dissolving 2-10pts.wt. binding substance, e.g. gelatin, and 10-50pts.wt. saccharides in water is added to coat (A) 100pts.wt. expanded cereal substances or flakes. The resultant coated substances are integrated and molded. The obtained molded articles, if necessary, are humidified or dried to adjust the moisture to 8-20wt.% and afford the aimed soft and readily edible cereal food having preservation quality.
