PURPOSE:To obtain a killer toxin-containing powder, having excellent preservation quality, stable to temperature, etc., and useful for preventing organic contamination in the brewing industry, etc., by concentrating the powdering a solution containing a killer toxin containing a specific compound, e.g. polysaccharides, etc., present therein. CONSTITUTION:A killer toxin-containing powder obtained by blending and powdering cultivation filtrate, of a killer yeast belonging to the genus Saccharomyces, Candida, etc., aqueous solution of a killer toxin, solution containing K1-K11 type killer toxin or new type killer toxin produced by Candida vines SW55, in the presence of one or two more selected from polysaccharides, e.g. cyclodextrin, etc., saccharides, e.g. glucose, etc., sugaralcohols, e.g. sorbitol, etc., and ammonium sulfate. The above-mentioned powder is capable of exhibiting germicidal effects or preventing effects on microbial contamination when added to to unrefined SAKE (Japanese rice wine), fruits juice or product SAKE and fermentation stopping effects when added to unrefined SAKE at the completion of fermentation thereof. |
