PURPOSE:To make it possible to raise saccharides content in a raw material food in a short time and to produce a snack food having crispy texture industrially and efficiently, by preliminarily pretreating the raw material food by a nonpoisonous electrolytic aqueous solution. CONSTITUTION:A raw material food having proper thickness and size is immersed in a nonpoisonous electrolytic aqueous solution such as about 3-10% aqueous solution of salt, potassium chloride, calcium carbonate, etc., for 15 min-about 1hr. Then the raw material food is washed with water, immersed in a saccharides aqueous solution having about 30-50% concentration for about 30min-3hr, then fried under reduced pressure by a conventional procedure and made into dried fried food. |
