PURPOSE:To produce a product capable of providing a refreshing feeling and taste in the throat and the sense of taste of characteristics jelly, by adding jelly small pieces adjusted to pH of acidity to syrup having higher acidity. CONSTITUTION:Gelatinized jelly which comprises agar, carrageenan, xanthan gum, locust bean gum, etc., and adjusted to pH about 3.0-4.7 is gelatinized and cut into a great number of small pieces. Separately syrup is prepared from fruit juice, saccharide, dyestuff, spice, etc., and adjusted to pH about 2.5-4.5. The jelly small pieces are mixed with the syrup, packed into an arbitrary container and sterilized under heating at about 60-85 deg.C for about 10-60min. |
