PURPOSE:To improve body and taste of a processed fish meat food and to decrease bleeding of oil, etc., without deteriorating the palatability of the food, by adding a specific amount of shortening to minced raw fish meat and preparing a processed fish meat food therefrom. CONSTITUTION:Meat of fish such as tuna, bonito, salmon, etc., is minced, added with shortening, homogeneously mixed and used as a raw material for a processed fish meat food. The raw oil used in the shortening is animal or vegetable oils and fats, preferably hardened corn oil or a mixture of about 70-90wt.% hardened corn oil and about 10-30wt.% refined corn oil and the shortening preferably has a melting point of 15-40 deg.C and a solid fat index of 5-25 at 20 deg.C. The amount of the shortening added to the minced raw fish meat is preferably 1-30wt.%. |
