<p>The invention relates to a process for the preparation of bread without flour. That is to say, grinding wheat or other cereal grains is dispensed with. The grains are fed to a specific device in which, by means of graters, only the very thin layer which covers the outmost surrounding part of the grain is removed by grating without splitting the grains in this process, so that they remain intact as whole grains. The grains are subsequently macerated by being added into containers filled with water and stay in the water for several hours until a suitable softness and saturation with moisture has been obtained. With these soaked whole grains, a uniform composition is made to which sour dough is added. This mixture is fed to machines in which the dough is kneaded, worked, partitioned and shaped, during which process a certain amount of flour is added. The finished pieces of dough are then placed in the oven.</p> |
