PURPOSE:To prepare a cream croquette rich in nutritive value, by blending cow's milk with bean curd to provide a principal material, kneading the resultant material with auxiliary materials, e.g. roasted onion, etc., and white cream, seasoning the resultant kneaded dough, forming the seasoned dough, applying a coating and frying the coated dough. CONSTITUTION:Cow's milk is blended with finely pulverized bean curd and the resultant blend is heated over a medium fire. An edible vinegar is added to boil the blend for about 3min. The boiled blend is then naturally cooled for about 5min to prepare a main material. Auxiliary materials, e.g. carrot, onion, etc., are roasted and kneaded with the above-mentioned main materials and white cream. Salt and pepper are added to form the blend into an oval shape, etc. A coating is then applied to the dough formed into the oval shape, etc., and fried at a medium temperature to afford a cream croquette. Thereby a side dish rich in balanced nutrition is obtained. |
