PURPOSE:To produce foam-containing cheese by blending cheese with cellulose, to produce gas-containing cheese by shearing cheese and further to produce desalted cheeses and desalted cheese-containing foods by desalting the prepared foam-containing cheese or the gas-containing cheese. CONSTITUTION:Cheeses are blended with an arbitrary amount of cellulose and mixed with a foaming agent or a gas is introduced to the cheeses to give foam-containing cheeses having about 0.2-1.0 apparent specific gravity. Or cheeses are mechanically sheared into a finely granulated state to directly give gas-containing cheeses or further blended with cellulose or a water-soluble high polymer or a nonionic surface active agent to give the gas-containing cheese. The prepared foam-containing cheeses or gas-containing cheeses are brought into contact with water, desalted, then homogenized into a predetermined water content composition to give desalted cheeses, which are blended with other foods to give foods blended with desalted cheeses.
