Metallic trace elements in ionic form, owing to their biologically useful property of valency change, accelerate the decomposition of unsaturated fatty acids in foods, to which they are added, in the form of an autocatalysis. If the metallic trace elements are added in solid form to a solid foodstuff, attempts are made to prevent the accelerated decomposition of the unsaturated fatty acids by coatings of maltodextrin or hardened fats. These coatings have proved to be unsatisfactory. The novel method is intended to enable the economic preparation of coated metallic trace elements in which the autocatalytic decomposition action of the said trace elements on unsaturated fatty acids no longer occurs. An aqueous solution of suspension of the trace elements with a coating medium is formed, a hygroscopic support material is introduced in solid form into a fluidised bed, the said solution is sprayed in and dried.
