PURPOSE:To produce frozen bivalves with sure opening of shells by heating in cooking, by heating bivalves with steam to slightly open the bivalves, bagging the bivalves, degassing and sealing. CONSTITUTION:Bivalves 1a are immersed in sea water for 8-24hr to remove sand, washed, fed to a steam dome 3 by a net conveyer 4, heated with steam for 40-45sec to slightly open the bivalves 1b. Then the bivalves 1b are instantly frozen at -25--30 deg.C, to give frozen bivalves 1, which are packed into a packing bag 2, degassed and sealed. |
