摘要 PURPOSE:To enable efficient aging, heating and sterilization treatment of a food in high uniformity even in the case of a food applied with only a small amount of salt in pretreatment step, by sandwiching a pretreated food material between a pair of electrode and applying a voltage higher than a specific level to the electrodes. CONSTITUTION:Sliced or ground meat of aquatic animal or a material composed of meat of aquatic animal is immersed in saline water and the meat added with salt is electrified to effect aging, heating and sterilization. In the above process, the material is put between a pair of electrodes 102, 102 and voltage of >=400V is applied to the electrodes.
