PURPOSE:To obtain a bubble-retaining substance such as mousse-like food, cheese dessert, whipped cream, etc., containing uniform bubbles and easily meltable in the palate, by using gelan gum as a dispersion stabilizer for bubbles. CONSTITUTION:For example, 10pts.wt. of sugar, 6pts. of vegetable oil, 8pts. of defatted milk powder, 0.5pts. of gelan gum and 75.5pts. of water are dissolved by heating, homogenized with a homogenizer and whipped with a hand mixer. The whipped mixture is filled in a container and thermally sterilized to obtain the objective substance such as mousse-like food. |
