摘要 PURPOSE:To obtain the titled food having excellent acid resistance, heat- resistance and spreadability and high stability of quality after long-term storage, on an industrial scale at a low cost, by adding gelan gum to a sheet food. CONSTITUTION:For example, 20% of apple juice, 20% of glucose, 20% of sugar, 2% of citric acid, proper amount of flavor, 1% gelan gum and 37% of water are mixed with each other and heated to obtain a uniform system. The mixture is formed to a sheet of 0.1mm thick with an applicator and dried with hot air to obtain the objective food.
