NEW MATERIAL:Compds. of formula I (wherein R1, R2 and R3 are each caffeic acid or ferulic acid; ANION<-> is an anion). EXAMPLE:Compd. of formula II. USE:Acylated anthocyanins useful as coloring matters for food, drugs, cosmetics, etc. PREPARATION:The flowers, leaves and stems of Zebrina pendula of the family Commelinaceae are crushed and then extracted with an oxygen-contg. alcohol soln. or an aq. soln. thereof. The extract is dried in vacuo to obtain an oily acylated anthocyanin. The compd. is purified by a precipitation method using ether or liquid chromatography with an adsorption column or a reversed phase distribution column. |
