PURPOSE:To obtain the titled composition durable to thermal sterilization, by using an edible oil consisting of oil and fat free from unsaturated fatty acid, an emulsifier consisting of hexaglycerol monostearate and a stabilizer consisting of pectin and gelatinized starch. CONSTITUTION:The objective composition is composed of 20-40wt.% sweetener such as sucrose, glucose, etc., 2-10wt.% edible oil consisting of oil and fat free from unsaturated fatty acid, e.g. medium-chain fatty acid triglyceride, 0.1-1wt.% emulsifier consisting of hexaglycerol monostearate and a stabilizer consisting of 0.5-1.5wt.% pectin and 1.5-2.5wt.% gelatinized starch. The content of water in the composition is 40-70wt.%. The above components are mixed together, sealed in a bag and thermally sterilized to obtain a product preservable over a long period. An iced food such as milk shake, etc., can be easily prepared by freezing the above composition, adding milk, etc., and stirring the mixture.
