PURPOSE:To prepare a rice cracker having high nutrient value and good for health, in high efficiency, by using unpolished rice flour accounting for more than half of the whole rice flour used as raw material and using polished rice flour less than the amount of the unpolished rice flour. CONSTITUTION:A rice cracker such as ARARE (rice cake cube), SENBEI (a flat rice cracker), etc., is prepared from rice flour composed of unpolished rice flour accounting for more than half of the whole rice flour and polished rice flour accounting for less than half of the whole rice flour. The rice flour, a steamed product of the flour or a steamed and kneaded product of the flour is mixed and processed to a rice cracker by conventional method.
