PURPOSE:To prepare a roasted onion resistant to collapse and instantly usable as a raw material for various kinds of cooking, by heating onion having a water-content of 80-30% to >=80 deg.C, sealing the heat-treated onion and heating to >=100 deg.C. CONSTITUTION:Raw onion or commercially available dried onion is conditioned to a water-content of 80-30%. There is no restriction in the method for drying, however, it is preferable to use hot-air drying, hot-air vacuum drying, microwave drying, etc. Freeze-drying method is not preferable. The dried onion having the above water-content is heated to >=80 deg.C, filled and sealed in a vessel by conventional method and heated again to >=100 deg.C to obtain the objective product. |
