PURPOSE:To prevent multiplication of various germs, to eliminate treatments such as heat sterilization, addition salt in high concentration, etc., from a processed food and to obtain a processed food having freshness and durability, by storing a food to be processed and a seasoning solution in a rotatable tank to be freely evacuated and processing the food under reduced pressure at ice temperature while stirring. CONSTITUTION:A food to be processed and a seasoning substance are put in a rotatable agitating tank to be evacuated and these raw materials to be processed are adjusted to approximately to ice temperature by a refrigerant recycling in a circulatory channel made at the wall of the agitating tank. The seasoning solution is permeated into the food to be processed in a reduced- pressure atmosphere while stirring by rotation of the agitating tank. |
