摘要 |
Sterilisation of egg yolk is effected by acidifying an aq. slurry of egg yolk to a pH of less than 6 and subjecting it to ultra-high temp. (UHT) treatment. The slurry contains 5-50 (esp. 15-25) wt.% egg yolk and is acidified to pH 3-5.5 (esp. 4-5) with H3PO4. The UHT treatment is effected at 140-150 deg. C for 3-20 sec.. |
