A method of stabilising heat sterilised evaporated milk against thickening, comprises adding to the cooled sterile milk 0.02-0.10 per cent by weight of the milk solids, of sodium, potassium and/or ammonium polyphosphates, the polyphosphates having been sterilised in the absence of heat. An aqueous solution of polyphosphate may be ultracentrifuged to remove septic media and then added to the milk. The stabilised milk may then be canned. |
