PURPOSE:To efficiently carry out enzymic reaction, by adding a lipophilic substrate, enzyme and water to a water-insoluble viscoelastic substance while keeping the substance in a state exhibiting spinnability under high shearing force and kneading the resultant blend. CONSTITUTION:A water-insoluble viscoelastic substance, e.g. polyisobutylene and derivatives thereof, e.g., asphalt, tall pitch, etc., is put in a kneading machine, e.g. kneader, extruder, etc., and kneaded by applying high shearing force and a lipophilic substrate, e.g. olive oil, beef tallow, palm oil, fish oil, etc., enzyme and water are added to the system making large deformation while keeping spinnability to continue kneading. The lipophilic substrate is occluded in the viscoelestic substrate and efficiently subjected to action of the enzyme. The formed lipophilic reaction product is discharged into an aqueous system in contact therewith following the deformation of the viscoelastic system and separated.
