PURPOSE:To obtain the titled cheese suitable as ingredients for instant foods, having excellent restoring properties by reconstitution with warm water, not causing de-oiling in reconstitution with warm water, by stirring emulsified cheese, which is melted under heating, at a lower temperature than the melting temperature and drying in a formed state. CONSTITUTION:A hydrous raw material containing emulsified cheese (processed cheese, etc.) melted under heating as a main raw material is stirred at a lower temperature than the melting temperature and dried in a formed state to give the aimed cheese. In the stirring, preferably a device such as silent cutter, cutter mixer, is used while adding water to the cheese.
