PURPOSE:To measure water with high accuracy at all times by converting the electric resistance value of a sample grain into a voltage by a couple of roll electrodes provided so that at least one of them is movable by a pressure governing mechanism. CONSTITUTION:A resistance-voltage converting circuit 15 measures and converts the electric resistance value of the sample grain into the voltage so that at least one of them is provided movably by the pressure governing mechanism, and a voltage holding circuit 16 holds the largest value of the output voltage of the circuit 15 temporarily. Further, an A/D converting circuit 17 is provided which converts the held voltage from analog to digital, and a control circuit 18 is provided which measures the crushing time of the sample grain by the electrodes 8 and 9 and outputs the A/D-converted signal to the circuit 17 at the end of the crushing time. When one sample grain is crushed, a voltage waveform having one peak value is outputted stably and its peak value is converted 17 only once at the end of the crushing period to obtain the water value of the sample grain. Consequently, the water of each sample grain can be measured with high accuracy.
