PURPOSE:To prepare packed rice-gruel preservable over a long period without causing collapse of rice grains, by putting soaked rice, water, an acid, etc., in a packaging container, adjusting the mixture to a specific acidic pH, sealing the content and heating under a specific condition. CONSTITUTION:Raw rice is washed, immersed in water for 30-90min to effect sufficient soaking, drained and put into heat-resistant containers in proper amounts. Water or a seasoning soup and an acid or an acidulant are put into the container and the pH of the mixture is adjusted to <=5.7, preferably 5.2-4.0, especially 4.5-4.0. The container is sealed, transferred to a retort oven and heated at 90-110 deg.C for 50-15min to obtain the objective rice-gruel. |
