PURPOSE:To obtain the titled dressing, having excellent harmony with flavor as well as good external appearance and suitable for preparing rice salad, by adjusting acidity in the aqueous phase, common salt concentration and ratio of the aqueous phase part to the oily phase part within specific ranges. CONSTITUTION:The aimed dressing, consisting of an aqueous phase and oily phase parts, having about 2.8-5.6% acidity thereof, about 10-20% common salt concentration thereof and obtained by adjusting the ratio of the aqueous phase part to the oil phase part to 90-40pts.wt. to 10-60pts.wt. |
