PURPOSE:To prepare a pudding rich in high-quality proteins, having remarkably low phosphorus and potassium contents and suitable for alimentotherapy for renopathy, etc., by using processed soybean having decreased phosphorus and potassium contents as a raw material. CONSTITUTION:A pudding is prepared by using processed soybean having a phosphorus and potassium contents of <=11mg and <=40mg per 1g of protein, respectively. The processed soybean used as a raw material is preferably produced by immersing soybean in an aqueous solution of pH3.5-6 and 20-70 deg.C, thereby eluting the phosphorus and potassium components of the soybean into the aqueous solution. |
