The machine is claimed for slicing fillets of frozen, smoked salmon or similar fish. The salmon fillet is placed on a vertically reciprocating carriage which presents a slice-thickness overhang to a high speed rotary blade operating in a vertical plane. An adjustable back-up plate sets the extent of over-hang and hence the slice thickness. As each slice drops away, the fillet slides down the carriage to meet the back-up plate. A fresh fillet can be loaded into the carriage without stopping the machine. Output is roughly three times that of previous machines.
