PURPOSE:To prevent crushing of salmon roe and improve yield thereof in loosening the salmon roe into separated grains, by washing salmon roe and previously dipping the salmon roe in an aqueous solution of ionic calcium before loosening into the separated grains with an egg grater. CONSTITUTION:Salmon roe are initially taken out of a salmon and washed with ice water or salt water with 3-10% salt content to wash away blood, etc., and drained. The salmon roe are dipped in an aqueous solution of ionic calcium in 0.1-10% concentration for 1-30min, then drained loosened into separated grains with an egg grater, drained, finally stirred in saturated salt water for 5-15min, drained and packed. |
