PURPOSE:To prepare the titled food free from bean smell and having excellent taste and flavor and extremely excellent shape-retainability, by mixing a natural gum and processed plum to soya milk, etc., under heating, adjusting the pH of the mixture below isoelectric point and solidifying the product by cooling. CONSTITUTION:The objective food can be prepared by mixing (A) soya milk, etc., with (B) a natural gum such as an algae extract, pectin, a combination of xanthan gum and locust bean gun, etc., and (C) a processed plum such as plum pulp, plum juice, plum extract, puree, plum vinegar, etc., under heating in a manner to attain a pH lower than the isoelectric point and solidifying the mixture by cooling. |
